Vegetable Tortellini Soup

One of my favorite soups to make! Easy to throw together and delicious! Enjoy!   
      


  1. 4 cups water
  2. 1carton of vegetable stock (I usually grab Wegmans organic brand)
  3. 1 - 1 1/2 cups of tortellini (dry or frozen)
  4. 3 carrots chopped
  5. 3 celery stalks chopped
  6. 1 lrg yellow onion chopped
  7. handful of fresh baby spinach
  8. sea salt (to taste)
  9. pepper
  10. dill
Combine water, vegetable stock, salt, pepper and dill.  Add chopped carrots, celery and onions. Bring to a boil then reduce heat to simmer and cover. Once vegetables are tender add tortellini. Once tortellini is cooked through, add the spinach. Once spinach has wilted the soup is done. Adjust salt to personal taste.
